If a child gets into a fight with a sibling, a logical consequences might be to be separated or to sit in talk-it-over chairs until they settled their dispute. Is it right?

There are lots of way to settle problem. Talk it all over is a good way to settle things out. The root of the fight should be tackle.
It depends on what you think is the most appropriate punishment. If it was over something menial and small then a talk or a time out will do. But for severe fights, then the punishment should also be severe.
This is the proper thing to do but we do not practice this at home. Since we are not used to it, i think it's fine for me not to practice this at home.
there are always two side of the story. so it is important to ask both of them and listen carefully about what is the problem before trying to arrange disputes altogether.
